Crabapple tree











This is one of my crabapple trees - it is right off the deck in the back yard and loaded with bright red apples. My friend asked me about dripping them when I am making jelly. You boil the crabs with water just enough to cover in the dutch oven. When they turn mushy you pour it through a cheese cloth bag and then hang the bag on a broom stick suspended between 2 chairs. I let it drip until all the juice is out of the bag. Then you put the juice and sugar in a dutch oven and cook it. Crab apples have natural pectin so no certo is required. It is a really old fashioned way to make jelly but I love it!! And heaven help the person who bumps the jelly bag!!!! The jelly is yummy!! I am going to try to send some to my friend across the border.
